2013 Ganymede Unfiltered Cabernet Sauvignon Stags Leap District

At Chimney Rock, our winemaking team believes in prolonged grape skin contact with its juice. This extra quiet time on the skins allows the young wines to absorb fascinating flavors and aromas, and best develop the luscious mid-palate. When the ideal balance is reached, we use gravity to slowly drain the tank. The last small portion of a vat – which we call the “pearl” of the tank – often shines with an additional layer of complexity and structure.This is one of the great “pearls” created from our celebrated Ganymede vineyard in the magnificent 2013 vintage. The last few gallons that slowly drained overnight formed a remarkable barrel – so remarkable that we didn’t blend it into one of our most eminent single vineyard lots. We cared for it separately and watched as it evolved into something we couldn’t imagine: a wine with complexity and depth beyond our wildest dreams.
