Description
Bottle size: 375ml
At Chimney Rock, we pride ourselves in being experimental in order to make greater wines each year. When given the opportunity to show a different aspect of one of the estate vineyards, or to try a new technique in the cellar we jump at it. The 2012 vintage created near-perfect conditions with a dry warm spring and a mild summer. Foggy and misty cool mornings in the early fall gifted us with conditions that might favor development of botrytis in our Sauvignon Blanc grapes. These conditions and the ever-present spirit of adventure inspired us to make a single barrel of late harvest wine. This wine was produced from our Estate Vineyard of Sauvignon Blanc. These grapes were allowed to hang until late October, and at that point they were infected with botrytis otherwise known as the “noble rot.” This fungus helped us produce our first dessert wine. We hope you delight in the aromatics and body of this little gem.
Tasting Notes
This wine is rich and viscous, the sweetness quite balanced with acidity and a long luscious finish.
